Years ago I canned tomatoes, tomato sauce, salsa, apples and various types of fruit jam using an old-fashioned boiling bath canner. I haven’t canned anything in a very long time, but I’ve been looking for the biggest pressure canner for the price. The FDA considers pressure canning the only safe method for non-acidic foods. I always wanted to be able to can various types of soups, stews and green veggies, but I used to be afraid of pressurized cooking and heating methods. Many people are, but they’re missing out on being able to preserve many different delicious foods. Pressure canners these days have many safety features and they’re super easy to use.
